Brian Robertson, a Las Vegas native, grew up loving sandwiches from his local Capriotti’s Sandwich Shop. With fond memories of the brand’s iconic subs like "The Bobbie," Brian has enjoyed the restaurant’s consistency and high-quality sandwiches for decades. Now, alongside his wife Amanda, he’s transforming that lifelong love into something even bigger: bringing the beloved sandwich shop to Boise, and the greater Treasure Valley, for the first time.

Business Expertise Meets Passion for Capriotti’s

The Robertsons come with a strong background in business. Owners of a successful construction company that operates across several states they bring years of experience in managing teams, operations, and large-scale projects. When they relocated to Idaho—where Amanda spent part of her childhood—they spotted a unique opportunity to introduce a franchise they adored to a rapidly growing market. Boise’s expanding population, coupled with their deep appreciation for Capriotti’s, made it the ideal place to launch their multi-unit franchise.

As business professionals, the Robertsons knew that choosing the right franchise partner was crucial. They thoroughly vetted several options, but Capriotti’s stood out from the rest in the quick-service restaurant (QSR) space. “Capriotti’s has never faltered in my book,” Brian shared, citing the brand’s commitment to quality over the years, even as other competitors in the sandwich space saw declines. This trust in Capriotti’s legacy played a key role in their decision to introduce the brand to Boise and the greater Treasure Valley.

Amanda echoed Brian’s enthusiasm, noting that many Treasure Valley residents were already familiar with Capriotti’s, thanks to their time spent in Las Vegas or other cities where the brand thrives. “Boise needs a Capriotti’s,” she said. After conducting their research and hearing from locals, the couple quickly realized that there was a strong demand for Capriotti’s in the Treasure Valley, and they are excited to meet the demand.

Leveraging Experience in a New Industry

While the Robertsons may be new to the restaurant industry, their extensive business experience gives them a solid foundation. “Many of the fundamentals of running a business—managing people, projects, and operations—are transferable across industries,” Brian noted. In addition to their construction expertise, Brian’s background in the restaurant industry as a bartender, server, and fast-food worker gives him added confidence in managing day-to-day operations. Amanda, meanwhile, plans to focus on customer service, ensuring their locations are known for delivering a top-tier experience, which will be a key differentiator in the local market.

Three Locations Planned—and Growing

Their first Capriotti’s location, set to open at 200 N Highbrook Way in Star, Idaho, is currently in the build-out phase with a target opening in December. But this is just the beginning for the Robertsons. They’ve already secured a lease for their second location, in Meridian, and are actively scouting for prime real estate for the third store. With a multi-unit franchise strategy in place, the Robertsons are fully committed to expanding Capriotti’s presence in Boise and the surrounding Treasure Valley area.

Capriotti’s Veteran Support Aligns with Personal Values

Beyond their enthusiasm for the brand’s delicious sandwiches, another factor that drew Brian and Amanda to Capriotti’s was its strong commitment to supporting veterans. As a veteran of the Army National Guard, Amanda was particularly impressed by Capriotti’s efforts to help veterans transition into franchise ownership. This alignment with their values, combined with the business opportunity, further solidified their decision to partner with the brand.

As they prepare for the grand opening, Brian and Amanda Robertson are committed to making Capriotti’s an integral part of the Boise community. Their strategy includes actively engaging with local city leaders, business owners, and influencers to generate excitement and anticipation for the new Capriotti’s location.
